Located along the famed Route 66, this neon sign is a fantastic example of the 1950s craze that swept the nation for the new taste of Chinese food, in particular, Chop Suey. Today the 'foodies' have set everyone straight about authentic Chinese cuisine and Chop Suey is definitely not on the menu. Evidentally, this is an American invention of combining whatever was left over in the kitchen and adding some Chinese spices to it. Its popularity soared through the 1950s and 1960s and then quietly faded from the American palate. However, the photo of the 'Bamboo Chop Suey Cafe' is outstanding. It fits the decorative theme of the day, with a pop of color and style. This photo would look great in the new 1950s kitchens of today.
