Lum's Chop Suey, Bakersville, California

This a Fine Art photo of a delightful vintage neon sign of Lum's Chop Suey restaurant. Chop Suey had a long run as a popular Asian dish, it was the rage from the late 1800s to the mid 1950s. No one knows exactly who is to blame for the invention of this dish, some say it was the Americans, others report it was Chinese immigrants and then there are those that believe that it originated in Guandong Province in China by a disgruntled chef who was forced to invent a new dish for his demanding employer. Let's just say that some one was having a bad day and when he decided to mix chicken livers and gizzards, shrimp, beef, possibly pork, cabbage, fungi, bamboo buds, pigs' tripe, bean sprouts, celery, onions and some unknown spices. What is even more interesting is that Chop Suey never caught on in the Chinese culture, but sailed across the sea to the US, where it took off as a real treat to the taste buds of Americans. Yes, all of the Chinese Restaurants advertised that they served the best Chop Suey, but it was still those crazy Americans who were actually eating it. Even the famous American artist Edward Hopper painted an oil canvas in 1929, simply called "CHOP SUEY". It is unknown if Hopper was paying tribute to this strange mixture of foods or if he was calling attention to the oddity of consuming Chop Suey. As time has passed and people have become more attuned to eating authentic foreign cuisine, Chop Suey, was slowly dropped off the menu in most Chinese restaurants. Hanging this whimsical neon photo in your dining room would brighten up the conversation and bring back childhood memories of having Chop Suey with your family.
